Thai Green Curry with Noodles

I am obsessed with Thai green curry at the moment. I’m literally craving it at least once a week, especially with these fresh turmeric lentil noodles from Marks and Spencers! Such great flavours!

Ingredients

➡️ 1tbsp oil
➡️ 1 chopped onion
➡️ 1 tsp ginger puree (or use fresh)
➡️ 1 tsp garlic puree (or use fresh)
➡️ Handful chopped mushrooms
➡️ Handful of frozen Quorn pieces
➡️ 1 jar of Thai green curry paste
➡️ 1 tin coconut milk plus 1/2 tin water
➡️ Handful veggies (whatever you have fresh or frozen can be thrown in)
➡️ 1 pack of fresh lentil noodles

Directions

✅ Heat the oil in a wok
✅ Fry off the onions
✅ Add in the mushrooms and ginger and garlic paste and fry until softened
✅ Add in the quorn and let it defrost and cook through
✅ Add the thai curry paste and stir
✅ Pour in the coconut milk and water and stir
✅ Add in the veggies and leave to cook through
✅ Once everything has cooked through, add in the lentils and combine with the sauce and let it simmer for 10 mins or until cooked

Super simple, quick to make and so yummy! Enjoy!
