White Chocolate, Blueberry and Pecan Banana Bread

We all know I love a banana bread recipe but you’ll definitely never find a plain old boring banana loaf here, that’s for sure!

This is a recipe for a white chocolate, blueberry and pecan banana bread and it’s packed full of goodies, absolutely delicious and definitely a contender for your fave banana bread recipe ever! You can thank me later…

Ingredients

➡️ 3 mashed ripe bananas (approx. 190g)
➡️ 1 egg
➡️ 75g honey
➡️ 160g self raising wholemeal flour
➡️ 40g oats
➡️ 90g milk
➡️ 20g melted coconut oil
➡️ 90g sultanas
➡️ 50g pecan pieces
➡️ 1/2 tsp baking powder
➡️ 150g frozen blueberries
➡️ 100g white chocolate chunks
➡️ 1 tbsp coconut sugar

Directions

✅ Pre-heat the oven to 180° Celsius
✅ Line a loaf tin with a loaf liner or grease proof paper
✅ Add the ingredients (except for the coconut sugar and some of the blueberries and white chocolate chunks as they need to be sprinkled on the top) into a blender and blend or combine ingredients by hand in a bowl
✅ Pour into the loaf tin
✅ Bake for 40 mins (or until a toothpick comes out almost clean)

Leave to cool, slice up and enjoy!! 😋🤤🤗
