Chickpea & Dried Apricot Tikka Masala

Such a delicious and super easy to make tikka masala made with dried apricots which are soooo yummy in a curry!!

Ingredients

➡️ 1 tbsp oil
➡️ 1 diced onion
➡️ 1 chopped clove garlic
➡️ 1 tbsp chopped ginger
➡️ Handful chopped mushrooms
➡️ 1 tin chickpeas
➡️ Handful frozen peas
➡️ Handful frozen edamame
➡️ 4 tbsp @pataksuk tikka masala curry paste
➡️ 1 tin coconut milk
➡️ 1 cup vegetable stock
➡️ 2 handfuls fresh spinach leaves
➡️ 125g dried apricots
➡️ 2 tbsp curry powder
➡️ 2 tbsp turmeric
➡️ 2 tbsp cumin
➡️ 1 tbsp garam masala

Method

✅ Heat oil in a wok and add in the onion, garlic and ginger and sauté until softened

✅ Add the mushrooms and stir through until softened

✅ Then add the remaining ingredients into the wok

✅ Leave to simmer for 20-30 mins on low heat and serve with naan bread, salad, rice – whatever ya fancy
