Fajita Egg and Veggie Fried Rice

Super quick and easy fajita egg and veggie fried rice that literally takes 5 minutes to make so it’s perfect for lunch or dinners during the week!

Ingredients

➡️ Few sprays of olive oil spray
➡️ 1 egg
➡️ Handful chopped mushrooms
➡️ 1/2 bag of @tildarice brown basmati rice (per person)
➡️ Handful steamed broccoli
➡️ Handful steamed cauliflower
➡️ Handful frozen peas and sweetcorn
➡️ Handful fresh spinach
➡️ 1 tbsp fajita seasoning
➡️ 1 tbsp soy sauce
➡️ Few cashew nuts

Method

✅ Heat the oil in a frying pan and add in the ingredients keeping the cashews to sprinkle on top
✅ Fry for a couple of minutes until everything is warmed through
✅ Pop in a bowl and top with the cashew nuts

Top tip 👉 Pre-steaming a whole bunch of veggies and keeping them in the fridge makes it super quick to throw them in your meals during the week!
