Healthy Snickers Cups

These little babies were absolutely amazing and super easy to make! I used dates to make the peanut butter caramel and they worked really well. The chocolate is homemade and made using the superfood cacao so it’s completely dairy free and good for you at the same time. What could be better?

Makes 9 cups

  • 110g oats
  • 6 tbsp maple syrup
  • 3 tbsp honey
  • 1 tsp vanilla extract

  • 9 dates
  • 76g almond milk
  • 5 tbsp sugar free caramel syrup
  • 1 tbsp honey
  • 1 tbsp fruit syrup (or just use an extra tbsp honey)
  • 3 tbsp natural peanut butter

  • 2 tbsp cacao powder
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil
  • 2 tbsp sugar free caramel syrup
  • 1 tbsp coconut sugar
  • 1 tbsp honey
  • 1 tsp vanilla extract

  1. Pre-heat oven to 180 degrees
  2. Line a muffin tray with muffin cases
  3. Soften the dates in water for 10 minutes
  4. Mix the base ingredients together in a bowl
  5. Spoon into muffin cases so that they are a third of the way full and pat down with back of a tsp or just your fingers
  6. Pop in the oven for 10 minutes
  7. Take out and let cool
  8. Mix the caramel ingredients together in a food processor
  9. Add a tbsp of the mixture to the muffin cases on top of the oat base
  10. Pop into freezer to harden for 20 minutes
  11. Mix the chocolate ingredients together in a bowl
  12. Take the cups out of the freezer
  13. Spoon on the chocolate into the top of the cups until it has filled the cup
  14. Pop back in the freezer for an hour or until hardened
  15. Keep them fresh in the freezer and enjoy them when you need a little pick me up
