Banana & Choc Chip Muffins
These are moist, delicious, simple to make and much healthier than shop bought ones!
Ingredients
- 3 medium mashed bananas
- 1 egg
- 1/4 cup coconut oil
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 tsp vanilla essence
- 1/2 cup almond milk
- 4 tbsp maple syrup
- 4 tbsp sugar free caramel syrup
- 4 tbsp honey
- Sprinkle of salt
- 1 cup self-raising flour
- 100g dark chocolate chunks
Directions
- Pre-heat the oven to 180 degrees / gas mark 4
- Pop some muffin / cupcake cases in a muffin baking tray
- Add the above ingredients to a mixing bowl in the order shown above mixing well when you’ve added each item
- Once you have a nice smooth batter, spoon it into the muffin cases
- Bake in the oven for 20-25 minutes
Serve with toppings of your choice or eat them on their own and enjoy!
