Healthier Baking | Banana & Choc Chip Muffins

Banana & Choc Chip Muffins

These are moist, delicious, simple to make and much healthier than shop bought ones!

Ingredients

  • 3 medium mashed bananas
  • 1 egg
  • 1/4 cup coconut oil
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp vanilla essence
  • 1/2 cup almond milk
  • 4 tbsp maple syrup
  • 4 tbsp sugar free caramel syrup
  • 4 tbsp honey
  • Sprinkle of salt
  • 1 cup self-raising flour
  • 100g dark chocolate chunks

Directions

  1. Pre-heat the oven to 180 degrees / gas mark 4
  2. Pop some muffin / cupcake cases in a muffin baking tray
  3. Add the above ingredients to a mixing bowl in the order shown above mixing well when you’ve added each item
  4. Once you have a nice smooth batter, spoon it into the muffin cases
  5. Bake in the oven for 20-25 minutes 

Serve with toppings of your choice or eat them on their own and enjoy!
