Chickpea, Lentil & Spinach Curry

The perfect recipe for vegetarians, vegans or anyone looking to reduce their meat consumption but still enjoy healthy, tasty, hearty food. 

I love one pan meals and this only takes a few minutes to prepare and is left to simmer for around 30-45 minutes and then your dinner is served. Simple, quick and delicious!

Ingredients

Serves 2-4 people (depending on what you serve it with, i.e. rice, naan bread etc.)

  • 1 tbsp. oil (I used coconut oil)
  • 1 diced red onion
  • 1 clove chopped garlic
  • 2 handfuls chopped chestnut mushrooms
  • 1 tin chickpeas
  • 1 tin organic green lentils
  • 2 tbsp. curry powder
  • 1 tbsp. turmeric
  • 1 tsp. dried parsley
  • 1 tsp. paprika
  • 1 tsp. vegetable bouillon
  • 1 tin coconut milk
  • 4 handfuls of fresh spinach (use frozen if you prefer)
  • 1/2 cup frozen peas
  • Sprinkle of salt and pepper to taste

Directions

  1. Heat the oil in a wok or large saucepan
  2. Add the onion and saute until softened
  3. Add the garlic and stir
  4. Add the mushrooms and saute until softened
  5. Add the chickpeas and lentils and mix well
  6. Add the spices and herbs
  7. Pour in the coconut milk
  8. Add the spinach stirring after each handful (it wilts down)
  9. Add the peas and salt & pepper
  10. Stir well and leave to simmer on low for 30-45 minutes or until the sauce has thickened
