Coconut, Fig & Raspberry Oats

A delicious bowl of goodness that will make your heart happy!

Ingredients

  • 1 sachet of porridge oats – I use Quaker Oats so Simple Original
  • 1-1.5 cups coconut milk (depending on your preferred consistency)
  • 1 tsp desiccated coconut 
  • 1 ripe washed fig
  • 2 large washed raspberries for the perfect photo (I added more after this photo was taken)
  • 1 tsp peanut butter
  • Drizzle of honey
  • Sprinkle of dark chocolate curls

Directions

  1. Mix the oats with the milk and pop in the microwave for 2 minutes or longer depending on the consistency you like
  2. Let to sit for a minute or so to thicken up
  3. Spoon in the desiccated coconut and mix through
  4. Warm the fig in the microwave for 20-30 seconds
  5. Cut the fig into 4 pieces and pop on top of the porridge
  6. Slice the raspberries and pop on top of the porridge
  7. Spoon the peanut butter into the middle
  8. Add the drizzle of honey
  9. Sprinkle the dark chocolate curls
