Omelette’s are an easy way of getting lots of veggies into your diet but they don’t have to be bland and tasteless. I used sun-dried tomato pesto and feta in this one to add some wonderful Mediterranean flavours.
Ingredients
- 2 eggs
- 1/2 cup milk
- 1 tbsp olive oil
- Handful frozen peas
- Handful sliced mushrooms
- Handful fresh spinach
- 1 tsp. red pesto
- Small handful crumbled feta
- Sprinkle salt & pepper
- Chilli flakes (optional)
Directions
- Heat the oil in a frying pan on low
- Pop the grill on a medium heat
- Pop the peas and sliced mushrooms in and sauté
- Crack the eggs in a bowl
- Add the milk, salt and pepper
- Whisk the eggs with a fork or electric whisk
- Add the spinach to the pan and stir through until softened
- Stir the pesto into the pan
- Pour over the egg mixture and distribute evenly
- Let simmer for a few minutes until the edges start to solidify
- Sprinkle the feta on top
- Take off the hob and pop under the grill until the top starts to look golden and the feta is melting
- Slide onto a plate
- Sprinkle chilli flakes
