Feta, pea, spinach, mushroom & red pesto omelette

Omelette’s are an easy way of getting lots of veggies into your diet but they don’t have to be bland and tasteless. I used sun-dried tomato pesto and feta in this one to add some wonderful Mediterranean flavours.



  • 2 eggs
  • 1/2 cup milk
  • 1 tbsp olive oil
  • Handful frozen peas
  • Handful sliced mushrooms
  • Handful fresh spinach
  • 1 tsp. red pesto
  • Small handful crumbled feta
  • Sprinkle salt & pepper
  • Chilli flakes (optional)


  1. Heat the oil in a frying pan on low
  2. Pop the grill on a medium heat
  3. Pop the peas and sliced mushrooms in and sauté
  4. Crack the eggs in a bowl
  5. Add the milk, salt and pepper
  6. Whisk the eggs with a fork or electric whisk
  7. Add the spinach to the pan and stir through until softened
  8. Stir the pesto into the pan
  9. Pour over the egg mixture and distribute evenly
  10. Let simmer for a few minutes until the edges start to solidify
  11. Sprinkle the feta on top
  12. Take off the hob and pop under the grill until the top starts to look golden and the feta is melting
  13. Slide onto a plate
  14. Sprinkle chilli flakes
