Brunch is the best meal of the day and if you are looking for a simple but delicious brunch you can make at home, this recipe will not disappoint!
Bacon, poached eggs and creamy garlic mushrooms on slightly toasted Mediterranean bread – OHHHH MAAA GOODNESS! This is so easy to make and went down a treat in my house 🙂
Ingredients – 2 people
- 4 slices Mediterranean bread
- 4 smoked bacon medallions
- 1 cup or a handful chopped chestnut mushrooms
- 2 tbsp garlic and herb soft cheese
- 2 eggs
- Handful cherry tomatoes
- 1 tbsp olive oil
- Rocket leaves to dress – optional
Directions
Preparation
- Lightly toast the bread
- Fry the bacon medallions in a little of the oil
- Saute the mushrooms in a little oil
- Add the garlic and herb soft cheese to the mushrooms and stir well
- Poach the eggs in simmering water for approx 4 minutes (for runny yolk)
- Chop the cherry tomatoes in half
To Serve
- Pop the toasted bread on a plate
- Drizzle a little of the olive oil on the bread
- Spoon on the mushrooms in garlic and herb soft cheese
- Pop the bacon on top
- Add the poached egg
- Pop the tomatoes on the plate
- Dress with the rocket leaves
