Bacon, Poached Eggs & Creamy Garlic Mushrooms

Brunch is the best meal of the day and if you are looking for a simple but delicious brunch you can make at home, this recipe will not disappoint!


Bacon, poached eggs and creamy garlic mushrooms on slightly toasted Mediterranean bread – OHHHH MAAA GOODNESS! This is so easy to make and went down a treat in my house 🙂


Ingredients – 2 people

  • 4 slices Mediterranean bread
  • 4 smoked bacon medallions
  • 1 cup or a handful chopped chestnut mushrooms
  • 2 tbsp garlic and herb soft cheese
  • 2 eggs
  • Handful cherry tomatoes
  • 1 tbsp olive oil
  • Rocket leaves to dress – optional



  1. Lightly toast the bread
  2. Fry the bacon medallions in a little of the oil
  3. Saute the mushrooms in a little oil
  4. Add the garlic and herb soft cheese to the mushrooms and stir well
  5. Poach the eggs in simmering water for approx 4 minutes (for runny yolk)
  6. Chop the cherry tomatoes in half

To Serve

  1. Pop the toasted bread on a plate
  2. Drizzle a little of the olive oil on the bread
  3. Spoon on the mushrooms in garlic and herb soft cheese
  4. Pop the bacon on top
  5. Add the poached egg
  6. Pop the tomatoes on the plate
  7. Dress with the rocket leaves
