This salad is proof to us meat eaters that you don’t need meat to enjoy a good protein filled meal and provides a perfect recipe for #meatlessmonday or #veganuary.
Simple to make but full of delicious flavours, this salad has warm ingredients meaning you can enjoy it no matter what the weather is doing outside!
Ingredients
- Spinach salad leaves
- Handful of chopped chestnut mushrooms
- Handful of cherry tomatoes
- Handful of walnut pieces
- Handful of chopped beetroot
- 1 tbsp houmous
- 1 tsp extra virgin olive oil
- 1 tsp balsamic glaze or vinegar
- Salt & pepper to taste
Directions
- Heat a little of the olive oil in a frying pan
- Add the chopped mushrooms to the pan and stir well until softened
- Pop the cherry tomatoes in and mix well with the mushrooms
- Add the walnut pieces to the pan and stir for about 30 seconds and then turn the heat off
- Pop the spinach leaves on a plate
- Add the beetroot to the plate
- Spoon on the mushroom, tomatoes and walnut pieces
- Add the houmous
- Drizzle the remaining olive oil and balsamic glaze
- Season to taste
