Peanut Butter, Banana & Honey Crumpet Stack

Crumpets are a favourite in most houses πŸ™‚ Stack them with peanut butter, banana and a drizzle of honey and you’ve got a winning breakfast or brunch combo πŸ˜€

Ingredients – per person

  • 2 crumpets – these were Warburton crumpets
  • 1 banana
  • 3 tbsp peanut butter
  • 2 tbsp honey
  • 1 tsp freeze dried strawberries

Directions

  1. Pop the crumpets in the toaster until they are slightly crunchy on the outside and soft in the middle – you might need to put them in twice on a medium setting but keep an eye on them – you don’t want burnt crumpets
  2. Chop the banana into nice chunky coins
  3. Warm the peanut butter slightly in a pan or in the microwave for 30 seconds
  4. Pop one of the crumpets on a plate
  5. Spread a little of the peanut butter on top
  6. Add some of the banana coins
  7. Pop the other crumpet on top making a stack
  8. Add the remaining peanut butter
  9. Drizzle the honey
  10. Pop the remaining banana on top or as many as fit (I used three for the photo)
  11. Sprinkle the freeze dried strawberries
