Healthy Treats | Gluten Free Vegan Protein Waffles

We recently bought a waffle maker so as you can imagine, I was dying to try out some delicious recipes for healthy waffles!

This recipe is made using a pea protein mix I found in TK Maxx / Homesense but you can order it via Amazon here. It was delish! It worked perfectly for waffles… they had that perfect crunch on the outside whilst remaining soft and fluffy on the inside 😀 My mouth is watering just thinking about them again…

Ingredients

To make 3-4 waffles (depending on how deep your waffle maker is)

  • 1 cup protein pow pea protein powder
  • 1 egg
  • 2 tbsp coconut oil
  • 1/4 tsp bicarbonate of soda
  • 1/4 tsp baking powder
  • 1 tbsp vanilla extract
  • 1 – 1+1/4 cup almond milk depending on consistency when mixed- add more if necessary

Directions

  • Whizz all the ingredients in a mixer or whisk with electric whisk until it’s a smooth batter
  • Pour into the waffle iron
  • Leave to cook through for 3-5 minutes or until they are no longer soft to the touch
  • Remove and top with your favourite toppings
    • I used banana, blueberries, coconut chips and honey 🙂
