Gluten Free Vegan Protein Waffles

We recently bought a waffle maker 😀 so as you can imagine, I was dying to try out some delicious recipes for healthy waffles! 😉

This recipe is made using a pea protein mix I found in TK Maxx / Homesense but you can order it via Amazon here 🙂 It was delish! It worked perfectly for waffles… they had that perfect crunch on the outside whilst remaining soft and fluffy on the inside 😀 My mouth is watering just thinking about them again…

Ingredients

To make 3-4 waffles (depending on how deep your waffle maker is)

  • 1 cup protein pow pea protein powder
  • 1 egg
  • 2 tbsp coconut oil
  • 1/4 tsp bicarbonate of soda
  • 1/4 tsp baking powder
  • 1 tbsp vanilla extract
  • 1 – 1+1/4 cup almond milk depending on consistency when mixed- add more if necessary

Directions

  • Whizz all the ingredients in a mixer or whisk with electric whisk until it’s a smooth batter
  • Pour into the waffle iron
  • Leave to cook through for 3-5 minutes or until they are no longer soft to the touch
  • Remove and top with your favourite toppings
    • I used banana, blueberries, coconut chips and honey 🙂
