Pesto, Bacon & Olive Spaghetti

Green pesto is one of those flavours that I crave for weeks after I’ve made something with it. It’s just got so much flavour and this pasta dish packs in lots more flavour and is ready in 15 mins (or as long as it takes for your pasta to cook)! 🙂

Ingredients – for 2 ppl

Spaghetti

  • 2 person measure of wholewheat spaghetti (using the hole in the middle of the utensil shown in the pic above)
  • 1 tsp extra virgin olive oil
  • Handful of chopped mushrooms
  • 4 smoked chopped bacon medallions
  • 2 large chopped tomatoes
  • 2 tbsp green pesto
  • Handful of olives
  • 1 tbsp grated parmesan

Directions

  1. Pop the spaghetti in a pan of boiling water
  2. Heat the olive oil in a frying pan
  3. Pop in the chopped mushrooms
  4. Add the chopped bacon and stir until cooked through
  5. Add the tomatoes, olives and pesto and stir through
  6. Once the spaghetti is cooked, drain and rinse the spaghetti popping it back in the saucepan on a low heat
  7. Add the pesto sauce and stir through
  8. Serve in bowls and sprinkle the grate parmesan on top
