Comfort food at it’s best 🙂
A hearty and warming sausage casserole brimming with flavours and slow cooked to perfection 😀
Ingredients
Serves 2 ppl
- 1 tbsp coconut oil / cooking oil of choice
- Handful chopped mushrooms
- 5-6 sausages (remove the skin)
- 1 pack casserole veg – I used one with carrot, swede, turnip, leek and onion but you can use whatever veggies you like
- 1 can of chopped tomatoes or 1 carton / jar passata
- 1 tin butter beans
- 1 beef oxo cube
- 1 tbsp bbq seasoning
- 1 tsp white pepper
- 2 tbsp worcester sauce
- 1 tsp paprika
- 1 tbsp dried basil
- 1 tbsp parsley
- Salt and pepper to taste
Directions
- Pop the slow cooker on auto or medium (or pop the oven on if using a casserole dish)
- Heat the oil in a wok / frying pan
- Saute the mushrooms and pop into the slow cooker
- Chop the sausages and saute adding them to the slow cooker
- Saute the veggies until slightly softened (optional – they can just go into the slow cooker raw)
- Add the butter beans to the slow cooker and then add all the spices
- Let it cook through for 4-6 hours on low / medium
- Serve with crusty sourdough bread or alone with a nice glass of red 😉
