Banana, Peanut Butter & Raisin Muffins

Yassss to healthy banana muffins with the subtle taste of peanut butter and some plump and chewy raisins 😀 Of course, all refined sugar free, dairy free and utterly delicious!

I whipped these up in 5 minutes and the cooking time was only 25 minutes in the oven so within 30 minutes, you could be enjoying one with a cuppa 😀

Ingredients

Makes 5 large muffins

  • 3 ripe bananas
  • 5 tbsp peanut butter (no added sugar natural pb if you can)
  • 1 tbsp melted coconut oil
  • 1 egg
  • Handful raisins
  • 5 tbsp honey
  • 2 tbsp sugar free butterscotch syrup (use maple syrup or another alternative if you don’t have this or skip it entirely)
  • 1 tsp vanilla essence
  • 1 tbsp coconut sugar
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1/2 cup self-raising wholemeal flour

Directions

  1. Pre-heat the oven to 160 degrees
  2. Mash the bananas in a mixing bowl
  3. Add the coconut oil and the egg and mix well
  4. Add the rest of the ingredients in the order shown above
  5. Pop the mixture into muffin or cupcake cases and into the oven for 25 mins

Take out and let cool for a few minutes before enjoying one with a cuppa 🙂
