Avocado & Feta Sweet Potato Toast

All my favourite things in one dish 😀

Just be careful when cutting the sweet potato to make the toast slices, I nearly lost a digit 😉

Ingredients – 1 person

  • 1/2 sweet potato
  • 1/2 avocado
  • Handful feta
  • Few cherry tomatoes
  • 1 tbsp. extra virgin olive oil
  • Salt & pepper to taste (I always use Himalayan pink salt)

Directions

  1. Cut the sweet potato into toast-able slices
  2. Pop them in a microwaveable dish and in the microwave for 2 minutes or until slightly softened as they will be quicker to toast
  3. Pop the sweet potato slices into the toaster and toast until slightly crisp
  4. Cut the avocado into slices & cherry tomatoes into halves
  5. Put the sweet potato on a plate and layer the avocado on top
  6. Sprinkle the crumbled feta
  7. Add the cherry tomatoes
  8. Drizzle the extra virgin olive oil
  9. Sprinkle salt and pepper to taste
