Healthy Banana Bread


I’ve always wanted to make a banana bread but baking used to scare me! Well today, I went to grab a banana from a bunch and as I took the one I wanted off, the tops of all the others came with it *meh don’t you hate it when that happens?* therefore, I had to do something to use them all up. So…I made this yummy banana bread 🙂


I swapped all the butter and sugar for coconut oil and maple syrup to make it healthier and of course, used whole-wheat flour! It’s also a dairy free banana bread! 🙂

Now I can’t wait to make some more versions of this with different ingredients 🙂 I’ve baked something! AMAZING! 🙂


  • Coconut oil – melted – 1/3 cup
  • Maple syrup – 1/2 cup
  • Eggs – 2
  • Mashed Ripe Bananas – 3 bananas
  • Almond milk – 1/4 cup
  • Baking soda – 1 tsp
  • Salt – 1/2 tsp
  • Self-raising wholemeal flour – 1 & 1/3 cups
  • Walnuts (chopped) – handful
  • Sliced almonds (I only used them to decorate the top)
    • Add in any other ingredients you want to – I’m looking forward to experimenting 🙂

Make it

  1. Pour the coconut oil and maple syrup into a mixing bowl and whisk
  2. Add the eggs, baking soda and salt and whisk
  3. Add the mashed banana and milk and whisk
  4. Add the flour and fold in with a spoon
  5. Add the walnuts and stir in
  6. Grease a loaf tin (I didn’t have a loaf tin so used an oven dish that was the right shape and it worked fine. I will buy a loaf tin now I know I can bake this though 😉
  7. Pour the mixture in evenly
  8. Sprinkle the sliced almonds on top
  9. Bake in the oven on gas mark 4 for 1 hour or until it’s cooked through
  10. Leave to cool for 10 minutes when you take it out of the oven and then gently slide it out
