I’ve always wanted to make a banana bread but baking used to scare me! Well today, I went to grab a banana from a bunch and as I took the one I wanted off, the tops of all the others came with it *meh don’t you hate it when that happens?* therefore, I had to do something to use them all up. So…I made this yummy banana bread 🙂
I swapped all the butter and sugar for coconut oil and maple syrup to make it healthier and of course, used whole-wheat flour! It’s also a dairy free banana bread! 🙂
Now I can’t wait to make some more versions of this with different ingredients 🙂 I’ve baked something! AMAZING! 🙂
Ingredients
- Coconut oil – melted – 1/3 cup
- Maple syrup – 1/2 cup
- Eggs – 2
- Mashed Ripe Bananas – 3 bananas
- Almond milk – 1/4 cup
- Baking soda – 1 tsp
- Salt – 1/2 tsp
- Self-raising wholemeal flour – 1 & 1/3 cups
- Walnuts (chopped) – handful
- Sliced almonds (I only used them to decorate the top)
- Add in any other ingredients you want to – I’m looking forward to experimenting 🙂
Make it
- Pour the coconut oil and maple syrup into a mixing bowl and whisk
- Add the eggs, baking soda and salt and whisk
- Add the mashed banana and milk and whisk
- Add the flour and fold in with a spoon
- Add the walnuts and stir in
- Grease a loaf tin (I didn’t have a loaf tin so used an oven dish that was the right shape and it worked fine. I will buy a loaf tin now I know I can bake this though 😉
- Pour the mixture in evenly
- Sprinkle the sliced almonds on top
- Bake in the oven on gas mark 4 for 1 hour or until it’s cooked through
- Leave to cool for 10 minutes when you take it out of the oven and then gently slide it out
