Cajun Lamb Steak with Cajun & Honey Quinoa Veggies


We love Cajun spices in our house! As you can probably tell haha! 😀

Ingredients (for 2 ppl)

  • Lamb steak – 1 pp
  • Cajun seasoning – 3 tbsp. (or to taste)
  • Courgette – 1/2 pp
  • Sugar snap peas – 1 cup
  • Mushrooms – 1 cup
  • Broccoli – 1 cup
  • Cherry tomatoes – 1 cup
  • Red and white quinoa – 1 cup
  • Honey – 2 tbsp
  • Salt & pepper – to taste
  • Balsamic glaze – 1 tsp pp
  • Coconut oil – 1 tbsp

Make it

  1. Sprinkle the Cajun seasoning on the lamb steak
  2. Chop courgette, broccoli, mushrooms and pop in a heated pan with sugar snap peas and coconut oil and sauté until soft adding some Cajun seasoning
  3. Pop the Cajun steaks in a pan with coconut oil and fry for a 3-5 minutes each side (depending on how you like it cooked)
  4. Add the cherry tomatoes and quinoa to the vegetables on a low heat and stir through with the honey
  5. Pop the vegetables on a plate and pop the lamb steak on top
  6. Sprinkle with salt and pepper and drizzle with balsamic glaze
