Squashetti is another great alternative to pasta 🙂 So yummy!! This recipe is my chorizo pasta sauce with added butterbeans and it’s really good… I hope you like it 🙂
Ingredients – for 2 ppl
- Red onion – x 1
- Mushrooms – 1 cup
- Chorizo sausage – 1 ring
- Butterbeans – 1 tin
- Sundried tomato pesto – 3 tbsp
- Chopped tomatoes – 1 tin
- Oregano – 1 tbsp
- Parsley – 1 tbsp
- Basil – 1 tbsp
- Worcester sauce – 1 tbsp
- Honey – 1 tbsp
- Salt and pepper – sprinkle
- Parmesan – sprinkle
- Squashetti – 1-2 courgettes pp
- Coconut oil – 1 tbsp
Make it
- Chop and fry the onion and mushrooms and fry in the coconut oil until softened / browned
- Chop the chorizo into bite size chunks and add to the frying pan
- Stir in the sundried tomato pesto and salt and pepper
- Add the worcester sauce and stir in the tinned tomatoes and butterbeans
- Add oregano, parsley, basil and honey
- Leave to simmer and stir occasionally for 45 mins or until thickened
- Fry the squashetti in a dry pan until cooked through
- Pop the squashetti on plate and spoon the sauce on top
- Sprinkle the parmesan over the top
- Enjoy!
