Butterbean & Chorizo Squashetti

Squashetti is another great alternative to pasta 🙂 So yummy!! This recipe is my chorizo pasta sauce with added butterbeans and it’s really good… I hope you like it 🙂

Ingredients – for 2 ppl

  • Red onion – x 1
  • Mushrooms – 1 cup
  • Chorizo sausage – 1 ring
  • Butterbeans – 1 tin
  • Sundried tomato pesto – 3 tbsp
  • Chopped tomatoes – 1 tin
  • Oregano – 1 tbsp
  • Parsley – 1 tbsp
  • Basil – 1 tbsp
  • Worcester sauce – 1 tbsp
  • Honey – 1 tbsp
  • Salt and pepper – sprinkle
  • Parmesan – sprinkle
  • Squashetti – 1-2 courgettes pp
  • Coconut oil – 1 tbsp

Make it

  1. Chop and fry the onion and mushrooms and fry in the coconut oil until softened / browned
  2. Chop the chorizo into bite size chunks and add to the frying pan
  3. Stir in the sundried tomato pesto and salt and pepper
  4. Add the worcester sauce and stir in the tinned tomatoes and butterbeans
  5. Add oregano, parsley, basil and honey
  6. Leave to simmer and stir occasionally for 45 mins or until thickened
  7. Fry the squashetti in a dry pan until cooked through
  8. Pop the squashetti on plate and spoon the sauce on top
  9. Sprinkle the parmesan over the top
  10. Enjoy!
