Another of my absolute favourite dishes is my chorizo pasta 🙂 It’s so good – full of flavour with a little spicy kick – perfect. Pop it on some courgetti as an alternative to pasta and you have yourself a tasty little dinner 🙂 Pour a glass of red, sit back and enjoy – yum!
This is a 5 minute prep meal and then you let it simmer gently for 45 minutes – what could be easier?!
I use dried herbs because I tend to kill any plants I come into contact 😉 with but if you have fresh, use them 🙂
Ingredients – for 2 ppl
- Red onion – x 1
- Mushrooms – 1 cup
- Chorizo sausage – 1 ring
- Sundried tomatoes – 1/2 cup
- Sundried tomato pesto – 3 tbsp
- Chopped tomatoes – 1 tin
- Oregano – 1 tbsp
- Parsley – 1 tbsp
- Basil – 1 tbsp
- Worcester sauce – 1 tbsp
- Honey – 1 tbsp
- Salt and pepper – sprinkle
- Parmesan – sprinkle
- Courgetti – 1-2 courgettes pp
- Coconut oil – 1 tbsp
Make it
- Chop and fry the onion and mushrooms and fry in the coconut oil until softened / browned
- Chop the chorizo into bite size chunks and add to the frying pan
- Stir in the sundried tomato pesto and salt and pepper
- Add the worcester sauce and stir in the tinned tomatoes and sundried tomatoes
- Add oregano, parsley, basil and honey
- Leave to simmer and stir occasionally for 45 mins or until thickened
- Fry the courgetti in a dry pan until cooked through
- Pop the courgetti on plate and spoon the sauce on top
- Sprinkle the parmesan over the top
- Enjoy!
