Chorizo & Sundried Tomato Courgetti

Another of my absolute favourite dishes is my chorizo pasta 🙂 It’s so good – full of flavour with a little spicy kick – perfect. Pop it on some courgetti as an alternative to pasta and you have yourself a tasty little dinner 🙂 Pour a glass of red, sit back and enjoy – yum!

This is a 5 minute prep meal and then you let it simmer gently for 45 minutes – what could be easier?!

I use dried herbs because I tend to kill any plants I come into contact 😉 with but if you have fresh, use them 🙂

Ingredients – for 2 ppl

  • Red onion – x 1
  • Mushrooms – 1 cup
  • Chorizo sausage – 1 ring
  • Sundried tomatoes – 1/2 cup
  • Sundried tomato pesto – 3 tbsp
  • Chopped tomatoes – 1 tin
  • Oregano – 1 tbsp
  • Parsley – 1 tbsp
  • Basil – 1 tbsp
  • Worcester sauce – 1 tbsp
  • Honey – 1 tbsp
  • Salt and pepper – sprinkle
  • Parmesan – sprinkle
  • Courgetti – 1-2 courgettes pp
  • Coconut oil – 1 tbsp

Make it

  1. Chop and fry the onion and mushrooms and fry in the coconut oil until softened / browned
  2. Chop the chorizo into bite size chunks and add to the frying pan
  3. Stir in the sundried tomato pesto and salt and pepper
  4. Add the worcester sauce and stir in the tinned tomatoes and sundried tomatoes
  5. Add oregano, parsley, basil and honey
  6. Leave to simmer and stir occasionally for 45 mins or until thickened
  7. Fry the courgetti in a dry pan until cooked through
  8. Pop the courgetti on plate and spoon the sauce on top
  9. Sprinkle the parmesan over the top
  10. Enjoy!

So simple and so delicious 🙂
