This is super quick, fresh, clean and nutritious – it’s basically healthy fast food – yay! 🙂
Ingredients
- Chicken breast
- Garden peas
- Edamame beans
- Beetroot
- Feta
- Parsley
- Coconut oil
- Salt and pepper
- Extra virgin lemon / chilli olive oil (or just plain olive oil)
Make It
- Chop and fry the chicken breast in the coconut oil until cooked through
- Add the parsley, peas, edamame and beetroot
- Pop into a bowl and sprinkle the salt and pepper to taste
- Add the feta to the dish
- Drizzle the lemon / chilli olive oil
That’s it! So easy! 🙂
