Sauteed Sweet Potato & Quinoa Veggies

I had loads of veggies to use up in the fridge so decided to make up a quick nutritious dish with complex carbs and protein to give me an energy boost 🙂

This is the kind of dish that is so quick and easy and is so good for you. You can of course add meat if you like. I am not vegetarian as you know from my other recipes but I do tend to eat a lot of vegetarian meals to give my body a break from processing meat. As long as you have all the essential vitamins and minerals along with the all important macro nutrients, you can get all the nutrition you need from a veggie dish.

Ingredients

  • Courgette
  • Aubergine
  • Mushrooms
  • Broccoli
  • Baby corn
  • Sugar snap peas
  • Sweet potato
  • Quinoa (I used merchant gourmet ready to eat red and white quinoa Merchant Gourmet Website
  • Mozzarella
  • Chilli Pesto / other pesto
  • Coconut oil

Make It

  1. Peel and chop the sweet potato and pop in a microwaveable container for 3-8 minutes depending on amount (I only used a small potato so 3 minutes was enough)
  2. Wash and chop the veggies into bite size pieces
  3. Heat a pan / wok with the coconut oil
  4. Add the baby corn, mushrooms, broccoli and stir for a couple of minutes
  5. Add the remaining veggies and stir in the chilli pesto
  6. Add the sweet potato and quinoa and stir through
  7. Pop into a bowl and add some slice of mozzarella and black pepper
