It’s almost BBQ season here in the UK so I thought I’d try out a new burger recipe 🙂 You can’t beat homemade burgers, they are so much healthier and you know exactly what’s in them (and more importantly, what isn’t in them)!
I love all things pesto related (as you will have seen from numerous dishes that I create and add pesto into) and the sundried tomato pesto with the other ingredients in these turkey burgers, were so delicious 🙂
Ingredients for the burgers (for 2 ppl)
- Turkey mince – 400g
- Mushrooms – 1 cup
- Red onion – 1/2 cup
- Sundried tomato pesto – 2 bsp
- Sunflower and pumpkin seeds
- Black Pepper
- Oregano
- Coconut oil
Make it
- Finely chop the onion and mushrooms and fry in the coconut oil until softened
- Add a bit of the pesto and stir through
- Pop in a large mixing bowl and pop the turkey mince in and mix through
- Add the rest of the pesto, sunflower and pumpkin seeds, black pepper, oregano and mix it all through
- Using either your hands for the rustic look or a burger press for a more professional look, mould the turkey mince into burgers
- Gently fry the burgers in the pan with coconut oil turning over them over until cooked through
Serve in a wholemeal toasted bun with mozzarella and salad – delicious!
