Chickpea & Pea Falafel

Perfect recipe for meatless Monday πŸ™‚ Or Tuesday, Wednesday, Thursday, Friday.. yeah ok you get the gist…

I have been dying to make my own falafel and didn’t realise how easy it is!! This was my first attempt so I am hoping that they will become prettier the more I make them HAHA! These were meant to be balls but that did not work… at all! They tasted great though and that’s all that really matters right? πŸ˜‰

Ingredients

Falafel

  • Chickpeas (1 can for 2 people)
  • Peas (1 cup)
  • Onion
  • Garlic
  • Coconut oil
  • Ground cumin (2 tbsp. but halve this is you prefer a more subtle taste)
  • Tandoori powder (1 tbsp.) – optional, I chose to add this for a stronger curry taste but it’s not over powering at all!
  • Salt and pepper
  • Parsley (1 tbsp.) – I used dried parsley but if you have fresh that would be better πŸ™‚
  • Egg
  • Flour or breadcrumbs (1-2 tbsp. depending on how moist the mixture is)

Make it

  1. Chop and fry onion, garlic and mushrooms in frying pan with coconut oil
  2. Drain and put the chickpeas into a food processor with the cumin, tandoori powder, parsley, peasΒ and breadcrumbs or flour (if you don’t have a food processor, just use a potato masher)
  3. Add the onions, mushrooms and garlic to the food processor and give it a whizz
  4. Pop the mixture into a bowl and add the egg, using your hands to mix it in and then mould bits of the mixture into balls (or not in my case haha)
  5. Ensuring there is still some coconut oil left in the frying pan (add some if not), gently fry the balls until golden brown and cooked through

Serve with roasted veggie salad or in a wholemeal pitta / wrap with salad πŸ™‚
