Happy Healthy Pancake Stack (the easy way)!

I have been dying to make a pancake stack at home 🙂 I am not much of a baker though… measuring things out just isn’t my thing… maybe one day when I have more time, I will get into it but for now, I am quite happy to stick to the easy but healthy way of doing things 😉

I found an amazing pre-made pancake mix that is gluten free and made with all the good stuff I would put in if I made them myself from scratch, such as; flaxseeds, buckwheat and quinoa. To top it off, they made the most amazing pancakes and not a single one was ruined. I only had to add 2 ingredients to the mix (eggs and almond milk) and then the toppings! My kinda pancakes!! 🙂

Ingredients

  • Eggs – x 2
  • Almond milk (or milk of your choice) – 400 ml
  • Sweet pea pantry grainy brainy pancake mix – x 1 pack
  • Coconut oil
  • Banana
  • Frozen blueberries
  • Maple syrup

Make them

  1. Whisk eggs
  2. Add milk slowly and whisk
  3. Whisk in pancake mix slowly
  4. Heat the coconut oil in a large frying pan (medium heat)
  5. Making sure the pan is hot (this helps to keep the mixture from spreading too much), ladel small amounts of the porridge mix into the pan (you should fit 2-3 small circles in the pan – they expand so add the mixture slowly and you only need a small amount for the perfect stack size)
  6. Pop the oven on so you can keep the ones you’ve cooked warm
  7. Once the pancakes in the pan start showing bubbles, they are ready to be turned over with a spatula
  8. Keep repeated until you have the desired amount of pancakes – you will need to keep adding a teaspoon of coconut oil to the pan to stop them sticking
  9. Pop frozen blueberries into a microwaveable dish and microwave for 30 seconds to 1 minute
  10. Chop the banana
  11. Put the pancakes you’ve made into a stack on top of each other
  12. Take a small cut out from the top pancake so that you can sit the blueberries in without too many falling off
  13. Pour the blueberries on top
  14. Add the chopped banana
  15. Pour the maple syrup over the creation – ‘Mmm yummy’!

Tip

Pop the unused pancake mix into a sealed container and in the fridge for another day 🙂 I would use within 24-48 hours though!
