I feel like if you can master making poached eggs, you are doing OK in life 😉 They aren’t the easiest things to make!
This is a simple dish, made in a mere 10 mins (if that) and is nutritious and healthy.
Ingredients
- Eggs (2 pp)
- Avocado (1/2 pp)
- Wholemeal bread
- Lemon rapeseed oil
- Salt and pepper
Make it
- Pop the bread in the toaster
- Mash the avocado and add some lemon rapeseed oil to give it a fresh zing (rapeseed oil optional of course)
- Add salt and pepper to the smashed avocado
- Oil a pan ready for the poached eggs and add pre-boiled water from the kettle
- Stir the water in the pan with a spoon so there is a small whirlpool in the centre and pop the heat on low under the pan
- Break the eggs and drop them into the centre of the pan slowly one by one (as long as the white bit covers the yolk and stays together, the egg will poach perfectly, if not and the white goes everywhere, I would do another one if you want perfect eggs)
- Let the eggs gently simmer away for 3-6 mins (or longer if needed – take them out and check them if you can’t tell)
- Spread the mashed avocado on the toast
- Take out the eggs and put them on a bowl tipped slightly to drain off the water
- Add the eggs to the avocado on toast
- Sprinkle salt and pepper to taste
- Done!
Tip
If you prefer your smashed avocado warm and it’s come out of the fridge, pop it in a glass bowl and over the pan with the eggs in to warm through a little bit 🙂

I agree! I just take the ultra easy route for poached eggs and microwave them in a coffee cup! haha

Haha! Well why not eh! I’m all for easy options but I have to admit, I enjoy the challenge of poaching eggs these days! They will not beat me 😂😂😂
