Mmmm a firm favourite in our house but we don’t eat white potatoes, white bread, white rice or white pasta as we’re both intolerant to white processed carbohydrates! Not a bad thing as they are really not very good for you. I will write a post specifically on the difference between white processed carbs and complex carbs and the effect they have on your body separately.
This is simple, doesn’t stray from the normal recipe but replacing white potato with sweet potato and not adding copious amounts of butter means that it’s a healthier version of a family fave.
Ingredients
- Sausages
- Sweet potato
- Red onion
- Beef / Chicken / Veg bisto gravy granules
- Brown sauce
- Salt & pepper
- Coconut oil
Make it
- Fry the sausages until browned in the coconut oil
- Peel, chop and pop the sweet potato in the microwave until mash-able – usually 4-8 mins
- Chop the red onion into strips and fry in some coconut oil until browned
- Make up some gravy with bisto (or similar) gravy granules (you can make up your own gravy if you have time but if not this is so simple)
- Add a splash of brown sauce to your sausages (whilst in the pan) and roll them in it
- Mash the sweet potato and add salt and pepper
- Add the browned onion to the gravy
- Pop the potato on a plate
- Place the sausages on top
- Pour the gravy on top ensuring you get a few bits of the onion
