Feta & Veggie Omelette

  • 2 eggs – pp
  • Green beans
  • Mushrooms
  • Sugar snap peas
  • Red pepper
  • Sweetcorn
  • Peas
  • Feta
  • Rapeseed Oil
  • Salt and Pepper
  • Cajun seasoning

Make it

  1. Fry the mushrooms, green beans, sugar snap peas, red pepper, peas and sweetcorn in a little rapeseed oil for 5-10 mins depending on how al dente you like your veg (I like mine quite crunchy)
  2. Sprinkle a little of the Cajun seasoning onto the veg
  3. Whisk up the 2 eggs and season with salt and pepper
  4. Add to the frying pan
  5. Sprinkle the feta onto the mixture
  6. Cook the bottom on the hob for a few minutes
  7. Pop under the grill to cook the top for a few minutes and until the eggs are cooked through and no longer runny
  8. Slide onto a plate
  9. Eat and enjoy!
