Simple and full of nutritious goodness!
Ingredients
- 2 eggs – pp
- Green beans
- Mushrooms
- Sugar snap peas
- Red pepper
- Sweetcorn
- Peas
- Feta
- Rapeseed Oil
- Salt and Pepper
- Cajun seasoning
Make it
- Fry the mushrooms, green beans, sugar snap peas, red pepper, peas and sweetcorn in a little rapeseed oil for 5-10 mins depending on how al dente you like your veg (I like mine quite crunchy)
- Sprinkle a little of the Cajun seasoning onto the veg
- Whisk up the 2 eggs and season with salt and pepper
- Add to the frying pan
- Sprinkle the feta onto the mixture
- Cook the bottom on the hob for a few minutes
- Pop under the grill to cook the top for a few minutes and until the eggs are cooked through and no longer runny
- Slide onto a plate
- Eat and enjoy!
