This is sooo yummy! An Italian inspired simple brunch dish with a zing…my Nonna would be proud! 😉
Ingredients
- 2 eggs pp
- Mixed olives
- Mushrooms
- Pumpkin seeds
- Sunflower seeds
- Coconut oil
- Chilli rapeseed oil
- Spinach and rocket salad
- Mozzarella
Make it
- Chop and fry up the mushrooms in coconut oil
- Chop the olives and add them to the mushrooms
Whisk up the eggs and add to the frying pan - Place the salad leaves on a plate
- Chop up mozzarella and add to salad
- Spoon the eggs into the plate and sprinkle the seeds
- Drizzle the chilli rapeseed oil (you can choose any oil or dressing you like) across the whole lot – lushious!
