Italian Inspired Scrambled Eggs


This is sooo yummy! An Italian inspired simple brunch dish with a zing…my Nonna would be proud! 😉


  • 2 eggs pp
  • Mixed olives
  • Mushrooms
  • Pumpkin seeds
  • Sunflower seeds
  • Coconut oil
  • Chilli rapeseed oil
  • Spinach and rocket salad
  • Mozzarella

Make it

  1. Chop and fry up the mushrooms in coconut oil
  2. Chop the olives and add them to the mushrooms
    Whisk up the eggs and add to the frying pan
  3. Place the salad leaves on a plate
  4. Chop up mozzarella and add to salad
  5. Spoon the eggs into the plate and sprinkle the seeds
  6. Drizzle the chilli rapeseed oil (you can choose any oil or dressing you like) across the whole lot – lushious!
