Thai Red Curry

The photo doesn’t do the taste justice! This was so yummy, took 5 minutes to prepare, has very little ingredients and is full of healthy nutrients 🙂

Ingredients

  • Chicken
  • Mushrooms
  • Onions
  • Courgettes
  • Barts red thai curry paste
  • Tin of coconut milk
  • Coconut oil
  • Basmati brown rice – I use Tilda pre-prepared rice as it’s so easy

Make it

  1. Add coconut oil to wok / pan
  2. Chop onion, mushrooms and add to wok
  3. Chop chicken and add to wok
  4. Chop courgettes and add to pan once chicken has cooked through
  5. Add Barts red thai curry paste to wok and stir it through (I use the whole jar as it equates to approx. 2 tbsp
  6. Add coconut milk to the pan
  7. Let the curry simmer for 30-45 minutes until thickened up
  8. Pop the Tilda basmati brown rice into the microwave for 2 mins (follow instructions on the pack)
  9. Pop the rice on a plate and spoon the curry on top

You are done and ready to eat a delicious meal that took 5 mins to prepare and is ready within 30-45 mins 🙂
