A yummy fast food that is simple and healthy! Delicious!
Ingredients
- Sweet potato
- Feta
- Mushrooms
- Pine nuts
- Sugar snap peas
- Spinach
- Sunflower seeds
- Pumpkin seeds
- Pomegranate seeds
- Red pesto – 1 tsp
- Coconut oil – 1-2 tsp
Make it
- Peel and chop the sweet potato into bite size chunks and pop into microwave in a covered dish / Tupperware container (making sure there is room for the steam to escape) for 3-6 mins (depending on how much potato there is and also how long your microwave takes to cook things – check halfway through how well they are doing)
- Fry the mushrooms in the coconut oil
- Wash the sugar snap peas, cut in half and add to pan with mushrooms
- Add the red pesto to the pan and stir through
- Add the sweet potato to the pan and stir through
- Add the spinach
- Sprinkle the pine nuts and seeds into the pan
- Chop the feta into bite size chunks
- Pop the contents of the pan onto a plate
- Add the feta
- Sprinkle the pomegranate seeds
