Spicy Poached Egg, Chorizo & Sweet Potato


This is a lovely warming spicy dish…perfect if you like a bit of chilli but you can take the spice out if you prefer…just replace the chilli rapeseed oil with normal rapeseed oil or your choice of oil.


  • Egg
  • Sweet potato
  • Mushrooms
  • Onions
  • Chorizo
  • Spinach
  • Sugar snap peas
  • Spinach
  • Chilli rapeseed oil
  • Chilli sunflower seeds
  • Chilli pumpkin seeds
  • Walnuts
  • Pine nuts
  • Salt and pepper

Make it

  1. Peel and chop the sweet potato into bite size chunks and pop in the microwave in pierced or slightly open container for 4-8 mins depending on the amount of sweet potato you are doing
  2. Fry onions and mushrooms in chilli oil
  3. Wash and chop sugar snap peas in half adding them to mushrooms and onions
  4. Chop chorizo into bite size chunks and add to pan
  5. Add the sweet potato to the pan
  6. Poach the egg/s for 2-6 mins depending on how you like them
  7. Add walnuts, pine nuts and seeds to the pan
  8. Add the spinach and stir
  9. Place the contents of the pan onto a plate
  10. Add the poached egg
  11. Add salt and pepper to taste
