This is a lovely warming spicy dish…perfect if you like a bit of chilli but you can take the spice out if you prefer…just replace the chilli rapeseed oil with normal rapeseed oil or your choice of oil.
Ingredients
- Egg
- Sweet potato
- Mushrooms
- Onions
- Chorizo
- Spinach
- Sugar snap peas
- Spinach
- Chilli rapeseed oil
- Chilli sunflower seeds
- Chilli pumpkin seeds
- Walnuts
- Pine nuts
- Salt and pepper
Make it
- Peel and chop the sweet potato into bite size chunks and pop in the microwave in pierced or slightly open container for 4-8 mins depending on the amount of sweet potato you are doing
- Fry onions and mushrooms in chilli oil
- Wash and chop sugar snap peas in half adding them to mushrooms and onions
- Chop chorizo into bite size chunks and add to pan
- Add the sweet potato to the pan
- Poach the egg/s for 2-6 mins depending on how you like them
- Add walnuts, pine nuts and seeds to the pan
- Add the spinach and stir
- Place the contents of the pan onto a plate
- Add the poached egg
- Add salt and pepper to taste
