Vegetable Frittata


This yummy veggie frittata is a fabulous meat free meal and it’s really good to give your body a rest from digesting meat every now and then.

Frittata Ingredients (per person)

  • Eggs (2)
  • Milk or almond milk (0.5-1 cup)
  • Sweet potato (0.5)
  • Broccoli (2-3 heads)
  • Courgette (0.5)
  • Mushrooms (3-4)
  • Onion (1 small)

Salad Ingredients (per person)

  • Lettuce – I used a superfood salad mix
  • Avocado (0.5)
  • Pomegranate seeds – (0.5 cup)
  • Coleslaw

Make your Frittata

  1. Chop and fry onions and mushrooms
  2. Peel and chop the sweet potato
  3. Put the sweet potato in a bowl and cover in cling film piercing several times
  4. Pop sweet potato in the microwave for 4-5 mins
  5. Steam broccoli and courgettes – approx. 10-15 mins
  6. Beat eggs and add milk
  7. Grease an oven-proof dish
  8. Spread the mushrooms, onions, sweet potato, broccoli and courgettes evenly along the bottom of the dish
  9. Pour on the egg mixture
  10. Pop in the oven on gas mark 6 / 190 degrees for approximately 25-30 mins (check that the egg is cooked all the way through and keep an eye on it so that it doesn’t burn)
  11. Chop up the avocado
  12. Pop the lettuce, avocado and pomegranate seeds on a plate
  13. Add a spoon or so of coleslaw to the plate
  14. Take out the frittata and pop it on the plate
