This is simple yet so healthy and tasty! A baked potato with the added nutritional benefits of veggies and healthy fats!
Ingredients
- Sweet potato (1)
- Edamame beans (0.5 cup)
- Peas (0.5 cup)
- Tenderstem broccoli (2)
- Avocado (0.5)
- Feta (0.5 cup)
- Grated cheese
- Olive oil (1 tbsp)
Making your baked sweet potato
- Wash sweet potato thoroughly
- Pierce with a knife
- Wrap in tin foil and pop in oven for 30 mins – take out and remove foil and pop it back in the oven for 10 mins OR if you are in a rush, pop in a microwaveable bowl covered with cling film, pierce and pop in the microwave for 5-7 mins (or until cooked to your liking)
- Pan fry edamame beans, peas and broccoli lightly
- Grate the cheese (any cheese you like – I use low fat mature cheddar)
- Chop avocado
- Cut the sweet potato in a cross and pinch the sides to open it up
- Drizzle half the olive oil on the potato (use butter if you prefer)
- Add grated cheese to the potato
- Pop the edamame beans, peas and broccoli on a plate alongside the sliced avocado and drizzle the remaining olive oil over the veg
