Baked Sweet Potato

image

This is simple yet so healthy and tasty! A baked potato with the added nutritional benefits of veggies and healthy fats!

Ingredients

  • Sweet potato (1)
  • Edamame beans (0.5 cup)
  • Peas (0.5 cup)
  • Tenderstem broccoli (2)
  • Avocado (0.5)
  • Feta (0.5 cup)
  • Grated cheese
  • Olive oil (1 tbsp)

Making your baked sweet potato

  1. Wash sweet potato thoroughly
  2. Pierce with a knife
  3. Wrap in tin foil and pop in oven for 30 mins – take out and remove foil and pop it back in the oven for 10 mins OR if you are in a rush, pop in a microwaveable bowl covered with cling film, pierce and pop in the microwave for 5-7 mins (or until cooked to your liking)
  4. Pan fry edamame beans, peas and broccoli lightly
  5. Grate the cheese (any cheese you like – I use low fat mature cheddar)
  6. Chop avocado
  7. Cut the sweet potato in a cross and pinch the sides to open it up
  8. Drizzle half the olive oil on the potato (use butter if you prefer)
  9. Add grated cheese to the potato
  10. Pop the edamame beans, peas and broccoli on a plate alongside the sliced avocado and drizzle the remaining olive oil over the veg

That’s it! Quick and simple and so tasty!

Enjoy!

With love,
Tash 💖
